- Mushrooms – 1 pack (I have oyster mushrooms)
- Italian herbs – add to taste
- Butter – 100 g (cold)
- Flour – 200 g
- Cream – 30 ml
- Chicken eggs – 1 pc.
- Salt – a pinch
- Leek – 1 pc.
- Mozzarella – 50 g
- Pine nuts
How to cook:
- For the dough: mix everything in a blender bowl and knead the dough. Or we do everything with our hands: we put flour on the table, cold butter cubes on top, rub everything into crumbs. Then add the egg, cream and knead the dough. We form the finished dough into a ball, wrap it with cling film and put it in the refrigerator for 30 minutes.
- At this time, we make the filling: fry the leek in a pan for a couple of minutes (I cut into rings), add the mushrooms (cut as we want). Fry for 5 minutes, salt, pepper, add a mixture of Italian herbs.
- We take out the dough from the refrigerator, put it on parchment and carefully roll it into a thin layer. Cut out the circle. Put the filling in the center. Roll up the edges of the dough. We shift to a baking stone or baking sheet, bake in an oven preheated to 200 degrees for 20 minutes.
- 5 minutes before readiness, we take out the biscuit and put the chopped mozzarella. Bake until it melts. Sprinkle top with pine nuts, if desired.
